Friday Food Club: Basil, avocado, & shrimp salad wraps

Everybody knows starchy carbohydrates have an important place in a healthy diet. Bread, pasta, potatoes; all of these foods give us the energy we need to keep going throughout the day. 

But there is a tendency in the UK to over rely on carbohydrates. As the home of the sandwich and ‘meat and two veg’, it’s not uncommon for people to have some form of carbs with every meal.

But there are changes you can make to freshen things up. That’s why, in this week’s Friday Food Club, the team at Ludo’s Primal Wellness have come up with a quick, tasty recipe that swaps out carbs for something a bit more wholesome.

Our Basil, avocado, & shrimp salad wraps use lettuce instead of the traditional flatbread. They’re easy to prepare, don’t require any cooking whatsoever, and most importantly, they’re packed full of goodness. Enjoy!


Cooking time

Prep time: 15 minutes

Cooking time: 10 minutes

From pantry to plate: 25 minutes

Ingredients

Salad

  • 20 large shrimp, peeled and deveined (about 3/4 lb.)
  • 1 1/2 c. grape tomatoes, halved
  • 1/4 small red onion, finely diced
  • 2 avocados, diced
  • 4 fresh basil leaves, thinly sliced
  • 2 large heads butterhead or romaine lettuce

Marinade

  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 3 fresh basil leaves, thinly sliced
  • 2 tbsp. white wine vinegar
  • 3 tbsp. extra-virgin olive oil or avocado oil
  • 1/2 tsp. paprika
  • Salt
  • Freshly ground black pepper

Step by step guide

  • Grease a large skillet over medium heat with cooking spray. Add shrimp and cook, stirring occasionally, until pink and no longer opaque, 2 minutes per side. Set aside and let cool.
  • Make marinade: In a small bowl, whisk together lemon juice, garlic, basil, vinegar, oil, and paprika and season with salt and pepper. 
  • In a large bowl, stir together tomatoes, onion, avocados, and basil. Fold in shrimp. Pour marinade over shrimp salad and toss until coated. 
  • Store shrimp salad in the fridge in a resealable container. Serve in lettuce cups when ready to eat.

  • Prawns are packed full of protein, and are a much healthier source of protein than fattier meats like beef or pork.
  • While avocados have a high calorie count, research has shown eating avocado makes you feel fuller than other foods. This can be a benefit as it’s thought that eating avocado can help you regulate your appetite.
